Chicken Salad on the go
- 2 cups cooked rooster (shredded or cubed)
- 1/3 cup chopped celery
- 1/4 cup chopped candy onion
- 1/4 cup dried cranberries
- 2 tbsp slivered almonds
- 2 tbsp crushed pecans
- 1 small can mandarin oranges drained (8.25 ounces)
- 1/2 of a pink pepper (diced)
- 1/4 cup mayo of selection
- 1/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1/4 tsp mustard powder
- 1 tsp dried dill
- Toss collectively rooster, celery, onion, dried cranberries, almonds, pecans, mandarin oranges, and pink pepper till mixed.
- In a separate bowl combine collectively mayo, Greek yogurt, lemon juice, salt, pepper, garlic powder, mustard powder, and dried dill till mixed.
- Add mayo and yogurt combination into the rooster combination and mix.
- Enjoy by itself or eat with bread, crackers, or lettuce wraps!
